Lamb kibbeh – healthy and tasty

Kibbeh is considered to be the national dish in the countries of Middle East. Patricia prepared for us the version with lamb meat, but it is possible to prepare it for example with a minced beef. Thanks to specific spices from this part of the world, Kibbeh has a really exotic delicious taste.


  • 1100 gms Lamb minced
  • 50 gms butter
  • 200 gms Chopped Red Onions
  • 25 gms Pine Nuts, Roasted
  • Salt, to taste
  • Black Pepper Powder, to taste
  • Cinnamon Powder, to taste
  • Allspice Powder, to taste
  • 200 gms Bulgur Wheat
  • Ground Coriander, to taste
  • 10 Ice Cubes

Steps for filling: Heat butter in a pan. Saute 150 gms onions until lightly brown and add pinenuts. Add minced lamb (700 gms), salt, black pepper powder, cinnamon powder, allspice powder and simmer until lamb is cooked. Drain excess oil and place the mixture aside to be used as the filling.

Steps for crust: Mix 400 gms of minced lamb, bulgur, 50 gms onions chop, corriander powder and salt. Place the mince in a blender and add ice cubes. Blend together until it forms a smooth paste. Crust is ready.


Steps for making kibbeh:
1. Take 20 gms of crust and make the shell by forming a piece of the Kibbeh into a small ball, the size of a golf ball. Rub your hands with a little ice water if the ball becomes sticky while you are rolling it between your palms.
2. Using an index finger and holding the ball in your other hand, make a tunnel in the ball. This is where the stuffing will go. Rotate the ball while digging the tunnel to make it and even thickness. You should end up with a hollow, cone – shaped shell.
3. Use 10 gms filling per piece. Using both hands gently close the shell over the filling using the ice cold water as lubricant and form it into a pie.
4. Repeat this for all and store the Kibbeh in chilled temperature.
5. Deep fry until golden brown.


Salad from Parsley

This healthy tasteful salad is usually served with Kibbeh. It’s full of antioxidants and vitamins and Patricia likes to serve it also with other meals. It’s really easy to make and the result is worth it!


  • 300 gms Chopped Parsley
  • 50 gms Fine chopped Onion
  • Allspice Powder, to taste
  • 500 gms Fresh chopped Tomato
  • 20 gms Fresh chopped Mint
  • 50 gms Bulgur (crushed wheat)
  • Salt, to taste


  • Lemon juice
  • Olive oil

Steps: Mix the onion with allspice powder and add chopped tomatoes, mint, parsley and bulgur over the mixture. Add the dressing and mix well.
